Quinoa Granola with Almond Milk

So last weekend I made homemade granola. It was the best! I got the recipe from this site, but tweaked it a titch.
1 cup whole rolled oats
1 cup buckwheat groats
1/3 cup quinoa
2 T chia seeds         
3/4 cup raw almonds, coarsely chopped
1/2 cup raw pumpkin seeds
1/4 cup raw walnuts, coarsely chopped
1/4 cup shredded coconut
2 tsp cinnamon
1/3 cup golden raisins (or other dried fruit)
1/3 cup raisins
1/2 cup maple syrup
1/2 cup coconut oil, melted

In a large bowl, combine all dry ingredients. Mix well. Add maple syrup and coconut oil. Mix well!
Spread onto a baking sheet lined with parchment paper. Bake for 60 minutes at 225 degrees.

Let cool completely.

Eat a lot of it. 

 So then I made homemade almond milk. HOLY SMOKIES this was so easy and delicious! I got the recipe and directions from the Little RedHouse


 I used an old peanut butter jar that I cleaned to put it in. 

Then, I ATE THE ALMOND MILK AND GRANOLA TOGETHER. Let me tell you, those bites were little pieces of heaven. LOVED it! 


I think the granola probably only lasts a week or less just because it started not tasting as good about a week later. That’s okay though. I doubt yours will last that long.


So so yummy. Clay calls it bird food. But he admitted it was tasty.

In other news, my life has felt quite crazy lately. So many things to do. But you know, somehow I'm still finding time for Revenge, Bachelor, Grey's Anatomy...and more...sadly enough. 

We have our doc appt in a couple days. I am at a point where I barely ever have symptoms, but I do sometimes and so I don't know if they are just human feelings that everyone gets, or if it's Lyme. I hate it. I just keep praying that I'll know the truth, if I'm done with treatment, or should keep going. I haven't quite figured it out yet honestly. A couple weeks ago I honestly thought I would tell my doctor I'm done, and have no symptoms. Then I started having achey joints. It's frustrating because lots of people have achey joints. My number one symptom was fatigue and that is gone. I am doing like...a billion things right now that could cause me to be soooo exhausted, and yeah I'm tired, but so much more energized than a year ago, when I was just working and coming and laying on the couch. So anyway, I am hoping that I can figure this out because the main way we decide to be done with treatments is based off of our symptoms. It's hard to know how honest I'm being with myself when I'm so sick of being treated and I want a baby so bad. Clay reminds me though that I am eating so close to perfect, I'm being active, and if I go off my pills and symptoms come back, I can just go back again. He reminds me that neither of us will ever be as bad as he once was. Never again. That is comforting. But it's still worrisome...to let it come back in any form. So, I will continue praying for wisdom and knowledge, staying in tune with my body, and discussing it with the smart doc :)

If you continue to eat the way you do, you will be skinny for life! You eat so healthy! It's awesome! I feel like if i made this granola I wouldn't like it because I"m not used to eating all this healthy stuff and yhou are, so maybe that's why it tastes good to you? Or will it taste good to everyone? get what i mean? Oh danyelli, in response to your lyme disease: i'm so sorry. I understand and smiled when you said "i don't know if these are lyme feelings or human feelings". because everyone has bad or achey or tired days. I felt that way with my cancer. When I was in the healing phase, I thought "is this healing from chemo? or human tired/normalness day?" Eventually you will be able to tell. And When you've had some distance from all of this you will look back and remember what it felt like to be truly bad. And you will have a sick day, and you will think "wow, I am doing better, because right now I feel crappy". I don't know if that made sense. I sure wish I had something i could say to make you feel better. You sure are learning a whopper on patience right now. I love you so much.

You have been so good with everything. I bet you're really close and I'm sure you will get an answer to your prayer in some shape or form. I will start praying for that too. That is so cool that you made almond milk! So amazing and it's even more amazing that it's easy. Good for you. My advice to you is to be COMPLETELY HONEST with your doc in everyway shape and form, and let them decide. You don't want to backtrack all you've accomplished. I get tired, but only a lot when I'm pregnant. And I was never tired when I was working out. It always WAY pumped up my energy. As for aches, I don't get those either. I would get them in my back from doing hair or my wrists from overdoing the piano, but it is always specific and I know what it's from. I never just generally ache. I don't know if I compare to other people not living with lyme. But just for SOME kind of comparison. I want you to move on with your life, but I don't want you to jump the gun 'cause you're so anxious and excited. It will all come together in good time and you'll be glad it came about when it did. I hope I'm not preachy, I'm not a doc and have no idea what you're going thru. I just love you and want you to make the right decisions.

Oh yeah, almond milk. I didn't realize you could make it. COOL. I bet it's way better. Better for you and better tasting. Way cool. And the granola looks good. Maybe if you freeze it it will last longer? Or can you - what is it called- when you vacuum and seal it shut? That's what Greg and I did with ours. Pat and Randy had a machine and we did it.

Wow. It's a miracle your symptoms have gone away (almost). I'm so happy for you. We'll start praying that you'll know if you should be done or not with treatment. The kids continue to pray for "danielle and clay" in all of their prayers. the granola looks so tasty!!! it looks just like one i used to make of chef brads. so yummy. but i want to try this one. and almond milk. we need to talk soon. love you!

That is sounding so good! The food,the lack of symptomes and etc. I agree with Meg, your doc will know what is best for you. But I will sure do as always and pray for you and Clay to be inspired to know what to say and that your doc will be inspired to know what to do and what questions to ask. I'm so proud of you and all that you do. Heavenly Father sure has to bless you because of all you do to help yourself. I love and miss you sooo much!

That looks so good! I found a little snack that I've been making that you might like. There called "No Bake Energy Bites" and the recipe is at smashedpeasandcarrots.blogspot.com There easy and use a lot of the ingredients I already have sitting around. I use almond butter instead of PB and added a little agave because I didn't have a ton of honey. You should try it!
