GF/SF Chocolate Mint Cookies

 So I went through a phase where I ate these cookies all the time! Well, not all the time. But it was my treat of choice for a while. They are gluten free/sugar free. Made with quinoa flour, and coconut sugar.
Ingredients:

1 cup butter softened
1 1/2 cups coconut sugar
2 large eggs
1 tsp mint extract
2 cups quinoa flour
3/4 cup cocoa powder
1 tsp baking soda

Directions:

Preheat oven to 350. 

Cream the butter and sugar together in a large bowl. Blend in eggs and mint extract and stir until the mixture has a smooth consistency. 

In a separate bowl, combine the flour, cocoa, and baking soda. Add the flour mixture to the butter mixture and blend well.

Place about 1 1/2 tbs balls of dough on cookie sheet, about 2 inches apart. Bake for 8-10 minutes. Allow cookies to cool before eating. 


 Now personally, I LOVE MINT! Mint and chocolate are divine together. I really want to come up with a mint frosting to put ontop. I also want to replace the mint with vanilla and figure out some sugar free marshmallow to put ontop like chocolate clouds? Yum. 

But, for now...these are pretty durn good.

Life...has been all sorts of crazy for me. But that's okay. I am SO looking forward to May. Tax season will be over, my classes will be over, I will be a CPA, and all I'll have to worry about is fun stuff like a garden, cooking, sewing, etc. Can't wait. 

Our appointment went well. Not TOO much to report. Clay is basically the same, I mean...he's continually improving but basically on the same treatment plan. I am going to start weening off of antibiotics! Can I get a YAHOOOO! I can't wait! These next two months I'm going to be doing two weeks antibiotics, two weeks herbs, two weeks antibiotics, two weeks herbs, etc. I told my doctor everything about how I am basically symptom free but still have achey joints sometimes. Its often enough that I don't think its like normal people, but its a different kind of ache than I used to have. She said that the reason it feels different is because I don't have as much inflammation as I used to. She also said that there's no way to know if it's something I'll just deal with and have because the Lyme could have permanently damaged my tissues...or something. But she gave me this new pill that is supposed to repair cells, so hopefully that helps! I am overall pretty happy with how the appointment went. We are probably still looking at about a year away for thinking about having babies. Which is sucky, but that's okay. I am confident that my babies are up there anxiously but patiently waiting and rooting us on.

Well, I am going to go in the bedroom and get some well deserved tv relaxation time :)

Repairing cells? That sounds freaky! But good I guess. Sorry you still have to wait a year. But seriously, when your first babe comes, you'll just be so in love and forget all about the painful journey and think, "Man, I would have waited my whole life for this." I'm serious. That's how I felt when I finally got married. It felt like I was waiting FOREVER. That's how it will be with your babes. But all the same, sorry you have to wait anyway. And once all your CRAZY is over, just think about what an opportunity you have to prepare and become an awesome person (not that you aren't already) and work on your talents and all the things that are so hard to do with a babe. LUV YOU!!!

I got chills when i read that part about your babies rooting you on. I never thought of it that way. but you're right. your picture looks divine. did you grind your own quinoa flour in your grinder? or buy it? yummy. i love you.

I'm so happy to hear about your appointment! It makes me so happy to hear when you are feeling well and on the up and up. It sounds like you guys are continually on the right track and I'm LOVING IT!

Dan- I TOTALLY thought Lyme Disease first off, obviously thanks to YOUR awareness! I asked the doctor I work for what he thought about it and he totally acknowledged that it was a possibility. I honestly don't think i ever remembered to mention it to her. but now I will! Thanks for the reminder!

So glad the appointment went well amd I love the cookies, they look so yummy. You girls are such good bakers, wonder where all of that talent comes from??? I think and pray for you every day. I am sure your little spirits are up there waiting to get here with you guys. You will make wonderful parents. It will be wonderful when all of this lyme junk is over for you. Love you

I'll give you a big YAHOO!!!!!! I am so happy that you are starting to slowly wean off! That is exciting!!! Your cookies look yummy! I will be so happy for you also when school is over and you have your license! what a journey! It has actually gone really fast, but rigorous! Hope the repair cells thing works. I don't see why they couldn't. I am sure those little future babies are up there rooting you on too! love and miss you!!! Have you thought about what you want for your b-day?

That's so awesome that your going off antibiotics, no matter how slowly, but that the direction is to be off them. You have worked so hard for it. And you are so close to being a CPA. And then you will have an awesome cookbook. Sigh......you are such an inspiration. I love that you are thinking of your unborn children and working so hard to prepare you body for them. I'm so grateful that my baby sister is such an inspiring example to me. The cookies look way yummy, and I love that you used quiona flour. Did you grind your own or buy it? Love you, miss you.

I thought I commented on this, I guess I didn't! Danielle I am so happy for you that you are weaning off your meds etc. We pray for you every night, and I know everyone else does too, so hopefully these prayers will be answered soon and you can get rid of this disease! Or atleast be symptom free! You are so amazing for making all these healthy recipes. I told Lizzie today that i need to start making these healthy recipes because I'm addicted to treats, and there's no way I'm giving them up. So I might as well start making them healthy! So I'll have ot start trying these recipes you've been posting! I lvoe you!
